Cool & Crunchy Apple "Chikin" Salad *VEGAN*

This is by far one of the easiest, vegan, protein packed, healthy and most delicious things I have ever thrown together in under 5 minutes!


Add cubed tempeh to boiling salty water. Boil for...like...4 minutes. Strain, pop into a mixing bowl. Add walnuts, fresh apple chunks (your favorite kind), sweeter the better. Dashes of sea salt and pepper, raisins, celery and some "just mayo" or whatever your favorite veganaise is. I like "Just Mayo" because it reminds me of my younger years, it tastes like Hellman's mayo, a LOT like it, but not it, so yay!

Stir this puppy up well, and serve immediately! I love the cool crunch of the celery, and the apple too but with the added sweet and the spice of the pepper with the tang of the mayo. The warmth of the tempeh makes it all so perfect.

This is PERFECT for taking along on picnics or to work or just as a snack to fill you up and give you some protein! Add some of your favorite nuts, different varieties of apples and some herbs to make it interesting. Let me know what you try!

Low Glycemic treats for anytime of year

Applesauce is simple, lovely, full of natural sugar and easy to make. It thickens up and adds sweetness to baked goods, naturally. It's full of fiber, vitamins and may help keep that Doctor away.

You can always add your own pizzazz with spices like nutmeg, cinnamon, ginger, all spice. Coconut Sugar is a low Glycemic Index sugar if you truly feel the need for added sweetness. I have researched it and it IS low GI even after "processing", which is minimal. Agave fooled a lot of us into thinking it was low GI, but after processing it's just as high GI as High fructose corn syrup. Not only is Coconut Sugar low GI, but it tastes phenomenal and resembles brown sugar, which I LOVE! Vitacost.com has a shaker version for super cheap! I really like the Big Tree Farms Coconut Sugar the most so far.




I use compote to top my oatmeal, gluten-free pancakes, or as a snack on it's own topped with walnuts or pecans. Compote is a great alternative to syrups, jellies, jams, honey and sugary sweets. I only blend mine a few pulses so it stays hearty and chunky. You can also add spices into the compote or the Coconut Sugar as well.




This recipe is so simple it will make you wonder why you hadn't thought of it before. It's a wonderful and easy way to get your DV of fiber and curb your sweet cravings. You can also get nifty and use a lot of different types of apples, I did and it rocked!

First, thoroughly wash your favorite varieties of apples (5-6). Roughly chop them up. No SEEDS please! Toss the chunks into a saucepan, add about 1 C. of water and any spices you'd like. Put on low-medium heat and cover. Stir as needed and cook for about 15-25 minutes. Be sure to keep covered in between stirring.

After they are all done cooking and are nice, soft and fragrant, let them cool. I separated the batch in half. One half for sauce one for compote. For the sauce use a high speed blender and blend away until super smooth. This is a great way to make healthy, homemade baby food too!

For the compote only pulse a few times, if that. This leaves it super chunky and thick for filling you up at snack or breakfast time!



MMMMMMM....warm apple compote sprinkled with Coconut Sugar. OMG.

1 C. Water

Coconut Sugar (optional)

Blender
