VEGAN Back-To-School Breakfast, Lunches, Snacks & Lunch Boxes

Since you guys already know how to whip up a mean PB&J from your years of sandwich mastery, I am simply leaving you with a list of some great options to pack as breakfast, snacks and meals for busy people.
Whether you have little ones going back to school, teens or you're a Vegan, grown-up kind of person, who wants healthier lunch options-here is your ULTIMATE VEGAN FOOD LIST!!!

*each photo has a link to the vegan recipe creator and photographer, so be sure to show them some love! If the recipe has anything not vegan please be sure to substitute accordingly!
BREAKFAST:

Muffins


Granola bar breakfast bars

Toast with nut butter

Bagel with vegan cream cheese, Earth balance or preserves

Fruit juice

Smoothies

Almond , soy or coconut yogurt with berries and granola

Vegan pop tarts


LUNCH:

Veggie sticks and hummus (cups or containers)


Pita pockets (in separate container add marinara, and veggie cheese)

Tortillas (rice, beans and guacamole or avocado in spate container)

Veggie dogs and baked beans

Veggie soups, lentil, spaghetti in thermos container

Fruit salad

Almond, Cashew, Hazelnut, Sunflower-jazz up your sandwich options with other stuff besides PB! Toss some sliced banana on too!

Faux lunchmeat slices, veggie cheese, condiments, tomato and lettuces

Veggie burger with toppings

Sliced watermelon, cantaloupe, honeydew, pineapple

Apple wedges and nut butter or vegan cheese slices

Sloppy joe a la vegan

Applesauce with cinnamon

Pita rounds, vegan cheese, marinara, vegan pepperoni (lunchables vegan style)

Cheese slices, crackers, veggie meats (lunchables)

Mac n cheese (hide some broccoli in there!)

SNACKS:
Fruit leather

Trail mix

Pumpkin seeds

Graham crackers, sesame or rice crackers

Granola bars

Dried fruits

Oranges and bananas

Rice cakes (use nutbutters to add protein o this snack!)

Grapes

Rasisins

Prunes

apples

Drinks:
Soy milk, Coconut milk, Almond Milk (flavor varieties too!)
Veggie and fruit juice boxes (many brands and varieties)
Water
Smoothies

Dinner Mom sure knows how to whip up some tasty, quick and healthy snack bites! The recipe is actually in original “vegetarian” form but includes how-to Vegan alternate, which is great!

With a bountiful, herby blend of Basil, Oregano and a dash of garlic, surely no one will miss the floury crust! Vegan cheesy, herby, garlicky goodness. Oh thank you. Thank you!

This particular post just happens to be on an amazing day where she gets a clean blood test back from the doctor about her Thyroid Cancer! Yay! Let’s all hope she is still doing well and make some of her pizza in celebration of her GREAT news!

Easy Meatless Monday's in Mexico! Vegan/ Gluten Free Tacos w/ Vegan Sour Cream

Sipping a cold drink on the seashores of Old Mexico? Unfortunately, most of us have no time or funds for that. The next best thing is the taste of authentic cuisine, made vegan and gluten free so everyone can join in the fiesta!

Warm your Corn or GF tortillas in the oven or microwave for about 30 seconds and pile onto a plate and cover to keep warm.
If you don't have any non-GMO corn or GF tortillas around, poke through your cabinet for some Bob's Red Mill Masa Harina and get ready for homemade gluten free tortillas!
2 cups Masa Harina to 1 cup of water. Be sure to mix very well, add water a tablespoon at a time if too dry.

Next take a ball of dough and start rolling it and pressing it into a flat disc, dampen your hands if the mixture begins to stick to you.

  • Last but certainly not least, add your flattened dough to a pre heated (med-hi), oiled, skillet. It will only take about a minute to cook both sides. The thinner you press the rounds, the faster they will cook.

    Top with Guacamole, beans, rice , salsas or whatever your little heart desires!

    Don't forget the SOUR CREAM! Vegan, dairy free!
  • 1 pack of silken tofu            
                                   


    1 ½  tbsp..  olive
    oil


     5 tsp. fresh lemon
      juice               



    1 1/2  tsp. Cider
      Vinegar


    Pinch of salt to taste
  • Blend thoroughly in blender, let set in fridge to firm up for about an hour, serve!
